How thoughtful of Graydon Carter to establish a velvet-rope clubhouse for the tony senior-citizen community otherwise known as the West Village. Reporting what everybody already knows, today’s Dining section features The Waverly Inn as the Vanity Fair polymath’s downtown version of Elaine’s. But it’s hipper than Elaine’s in at least one way: Carter’s crowd of reluctant retirees — Robert de Niro, Calvin Klein, Fran Lebowitz — can count about a decade before Depends become a necessity.
